Ishikiri Nabe is a local dish in Hokkaido, made with salmon and seasoned with miso. It is sometimes confused with Sanpei-jiru, which uses salmon, but Ishikari Nabe is made with miso and uses raw, unsalted salmon.

The process of making Ishikari nabe involves simmering salmon meat, tofu, and vegetables, like onion, cabbage, daikon, shiitake mushrooms, carrots, and leeks, in a broth made with miso and kelp stock. In addition to adding sake lees, butter or milk can be added as a secret flavor to the broth.
